Ageing: Made from selected holandas aged for more than 35 years using the traditional Jerez nursery system of Soleras and Criaderas in 500 and 600 litres American oak vats (botas) which were previously used to mature 10-year old Oloroso Sherry. The long oxidative ageing in these botas converts the holandas (distillate) into brandy conferring a mahogany colour and intense aromas which linger on the palate.
Tasting Notes: Dark mahogany in colour, with an intense nutty aroma mingling with hints of
vanilla and dried fruit. Full of personality, the flavours are powerful on the palate with almond,
hazelnut, fig and raisin dominating, along with sweet spice, vanilla and toast, all perfectly balanced
and yielding a round and unctuous mouthfeel and a persistent finish.
