Grape Varieties: 100% Pedro Ximenez
Ageing: 3-4 years aging natural sweet wine, obtained from the partial fermentation of musts form the Pedro Ximenez grapes which are sun-dried to concentrate the natural sweetness. Approximately 3-4 years of oxidative ageing by the system of “Soleras y Criaderas” in American oak butts.
Tasting Notes: Dark chestnut colour, thick and
unctuous with powerful notes of fresh raisins and other
concentrated fruits flavours of prunes and cassis. Fullbodied
and velvety smooth on the palate, this Sherry
yields intense sweetness balanced by a sharpness
which gives it great volume and persistence.
Food Match: Ideal with hard or blue cheeses, salted nuts
or as a desert wine with chocolates or sweet pastries.
Also excellent for making rich sauces to accompany
grilled or roasted red meats or salad vinaigrettes.
